Chocolate Chip Macadamia Cookies

I HAD to try this recipe .. it came into my email box this weekend from Chocolate Covered Katie.

After making it I remembered I don't like macadamias in cookies, whoops! The extra chocolate chips I put in them made up for it though :)

I suggest you check out this gals blog... you will be up late making a lot of treats! They all look incredible! 

Soft Chocolate-Chip Macadamia Cookies
(Makes 14-20 cookies)
  • 2/3 cup plus 1/2 cup oat flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 4 tbsp brown sugar or brown coconut sugar (or Sucanat)
  • 4 tbsp xylitol or white sugar (or evaporated cane juice)
  • 1/4 to 1/3 cup chopped macadamia nuts (or sub another nut)
  • 3 tbsp to 1/2 cup chocolate chips (I never bother to measure.)
  • 1 tsp pure vanilla extract
  • 2 tbsp vegetable or coconut oil
  • 3-5 tbsp milk of choice, as needed
Preheat oven to 380 degrees. Combine all dry ingredients and mix very well. Add wet, and form into a big ball. Now make little balls from the big one. For soft cookies, refrigerate until cold (otherwise, just bake right away). Bake 7 minutes, or until they’ve spread out and look just a little undercooked. Remove from oven when they’re still a little undercooked, then it’s important to let cookies cool at least 10 minutes before trying to remove from tray, as they’ll continue to cook while cooling. For soft cookies, store in a lidded plastic container. For crispy cookies, store in a lidded glass container.

You might have noticed I added a page at the top. If you didn't...I've added a page to the top!! Food Legend (and where to find them) Yay.

When I first started my vegan journey I researched online and found a lot of info spread out among a ton of sources. I'm hoping to have a blog that has eventually has a lot of info for anyone who discovers it and also to serve as a reminder to myself! Sometimes I find information and I can't retain all of it without writing it down.

There is so much information out there and sometimes it's hard to know where to start. I am hoping that I can at least help one of you!

Michael Clarke Duncan


I found this link a few days ago and also saw it on The Discerning Brute. I am SO excited that Michael is vegetarian! This is GREAT news that someone so big and powerful has chosen this lifestyle. It gives me hope that people won't think that everyone who is vegetarian/vegan are wasting away.

The only problem I had with his interview was that he feels relieved that he isn't hurting animals anymore, but when you remain vegetarian (still consuming eggs and dairy products) you are in fact still hurting the animals.

Soapbox moment...turn away if you have to! In order to get milk, you have to keep the mother cows pregnant. Cows aren't just a tap you can turn on whenever you want. Once a calf is born, if it's a male they take it away to be sold for veal and if it is female, she is still taken from the mother, and put into the system of being a producer of milk. The mother cow never sees their baby again. The whole reason for her producing milk is to nourish her calf, but instead it gets pumped from her body for humans. Sad.

I could go on, but I won't.. end soap box moment.

I am still VERY excited that Micheal is vegetarian and hope other big strong men follow in his foot steps! YAY

Every once in a while I add more sites to my right side bar. Today I added some and one left me giggling a bit. When I first read The Wicked Good Vegan's post 'but, why?', I laughed.

Unfortunately there will always be someone out there that thinks they know more than you. It goes without saying...your job, your kids, your clothes or your eating choices. It's a part of life. I usually just let the person tell me what I should do.. It makes them feel better :)

And then I do what I want to do instead.
