Coconut/Pineapple Popsicle

Um, yum! I usually buy Naked Coconut Bars from Coconut Bliss and they are pretty amazing.

I had a craving for them this past week, but thought..why not try to make them myself? I know, right? These aren't as creamy as the coconut bliss ones, but I'm sure after trying a few times, I'll get it. And I don't mind that I have to keep trying - ha!

I decided to use the last bit of Pineapple I had in my fridge as well, so they are kind of Pina colada - ish minus the alcohol.

1 can of Coconut Milk
1 cup chopped pineapple, juiced
Stevia (I used 5 drops)
1 TSP Vanilla
1 TBSP Finely chopped Coconut shavings (optional)

I juiced the pineapple, but still used some of the pulp for texture. Pretty straight forward...combine all ingredients and add them to your popsicle tray.



I broke my blender - I KNOW! so I would have liked to have blended it a bit more. I think that would have given it a bit more of a creamy texture...but like I said, I can always try again!




I let them freeze for about 4 hours before I remembered that they were in there. I can't believe I forgot.




I like having the coconut bits in there, but if you don't like chewing when you're eating a popsicle, I'd say leave them out.

'You won't be able to kiss anyone' Garlic dressing

'You won't be able to kiss anyone' Garlic dressing:

I made this dressing a few weeks ago and added it to my instagram feed. I haven't had that many people come up to me and ask for a recipe before. If you love garlic as much as I do, give it a try! So delish!



1/2 cup Grape-seed oil
1.5 Tablespoons Nutritional Yeast
1 Teaspoon dry mustard 
1 Tablespoon Soy sauce
1 Tablespoon garlic granules (or fresh garlic if you want!)
1" by 3" chunk of firm tofu crumbled up
Juice from 1/2 lemon
salt and pepper to taste

I'm a fan of garlic granules because all I have to do is shake (or measure) it out and I don't have to touch it, but again, nothing beats fresh garlic.

The tofu gives it a cheesy kind of texture, and if you haven't used nutritional yeast before it gives the cheesy taste.



I added this dressing to this salad combination: Romain lettuce, Red cabbage, Cucumber, Sunflower seeds, Pumpkin seeds, Hemp hearts, Sesame seeds, Pan fried Chickpeas and warmed up Artichoke hearts.







Best.Salad.Ever. Trust me :)

My garden

I wouldn't say I have a green thumb. I've killed most of the plants I have owned with exception of the African Violet that sits in my windowsill. So when I heard that the lady that lived in the suite above me was moving out and I was the caretaker of the house garden, I was a little anxious.

She had planted some things for me last year and although I had nothing to do with it, none of my seeds sprouted and hers flourished. Apparently I don't even have to be near something for it to not sprout!

I started planting in mid April and am only now seeing some stuff come up. I planted beets, radishes, kale, carrots, cucumber, Asian greens, spinach and lettuce. There are a few sprouts here and there, but you should see my RADISHES! Who ever thought I would be so excited about a radish? They are adorable...ADORABLE!  :)


When more things come up I'll take more pictures. I'm a little embarrassed about the lack of greenery right now, but just look up at the picture again. So cute.
